Firecracker Meatballs

Meatballs filled with Asian flavors then tossed in a sweet, savory, spicy, and creamy sauce for a flavor explosion best served over rice.

Ingredients

  • 2 Tablespoons mayonnaise
  • 3 Tablespoons sour cream
  • 2 teaspoons honey
  • 1 Tablespoon soy sauce
  • 1 teaspoon Sriracha
  • 16 oz. ground beef
  • 1/3 c. panko breadcrumbs
  • 1 Tablespoon ginger minced
  • 2 scallions thinly sliced
  • 1 Tablespoon soy sauce
  • salt and pepper
  • 1 c. jasmine rice
  • 1 teaspoon sesame seeds

Instructions

  • Preheat the oven to 425 degrees.
  • Spray a sheet pan with cooking spray and set aside.
  • In a large bowl combine the mayonnaise, sour cream, honey, soy sauce, sriracha, salt, and pepper. Whisk until smooth. Set aside.
  • To make the meatballs combine the ground beef, breadcrumbs, ginger, scallions, soy sauce, salt, and pepper. Mix well with your hands to combine.
  • Roll the beef mixture into 16 meatballs.
  • Place the meatballs on the prepared baking sheet. Bake for 15-18 minutes or until cooked through.
  • Meanwhile, cook the rice according to the package directions.
  • Once the meatballs are cooked, remove them from the oven and put them into the bowl with the sauce. Toss to coat the meatballs.
  • Divide the rice between 4 bowls. Top each bowl with 4 meatballs and drizzle with the remaining sauce.
  • Sprinkle the tops of the meatballs with the sesame seeds and serve with roasted vegetables if desired.
