I’m always on the hunt for new recipes.   I like trying to combine flavors that might not normally go together but that end up taste amazing.  This firecracker sauce is one of those recipes.
 
While the recipe I’m sharing makes around 16 meatballs, if you are serving 4 or more people I would probably double the recipe.  These meatballs taste amazing the next day so I like to pack them up in my lunch.
 

For this recipe you will need:

  • mayonnaise
  • sour cream
  • honey
  • soy sauce
  • sriracha
  • ground beef
  • panko
  • ginger
  • scallions
  • salt and pepper
  • sesame seeds
 
Begin by making the sauce so that the flavors can meld together.   Combine the mayonnaise, sour cream, honey, soy sauce, and sriracha and mix well.   Place the sauce in the refrigerator while you prepare the meatballs.

To make the meatballs you can make your favorite meatball recipe and just add in the Asian flavors or you can follow the recipe below.   The basic composition of the meatballs is simply ground beef, panko, salt, and pepper.   Then you add in the ginger, scallions, and soy sauce.  You can even add in additional sriracha is you like spicy meatballs.
 
The meatballs are baked which means you have time to prep a side dish while they are baking.  The bake for about 15 minutes.
 
Once they are finished they are removed from the oven and tossed in the sauce.   I like to serve them over rice with some type of roasted vegetables.   Good choices would be roasted bell peppers, broccoli, or carrots.
 
These meatballs are bursting with flavor.   The sauce is creamy and just a little bit spicy while the meatballs have a mildly Asian flare.

If you make a double batch a few fun ways to repurpose them into leftovers is to:

  • Cut the meatballs in half and put them, along with rice, in lettuce wraps.
  • Make quick pickled carrots and onions (see recipe here) and add cilantro to make Bahn mi meatballs.
  • Make Lo mein noodles and toss with these meatballs and extra firecracker sauce.

Firecracker Meatballs

Cook Time: 30 minutes

Ingredients

  • 2 Tablespoons mayonnaise
  • 3 Tablespoons sour cream
  • 2 teaspoons honey
  • 1 Tablespoon soy sauce
  • 1 teaspoon Sriracha
  • 16 oz. ground beef
  • 1/3 c. panko breadcrumbs
  • 1 Tablespoon ginger, minced
  • 2 scallions, thinly sliced
  • 1 Tablespoon soy sauce
  • salt and pepper
  • 1 c. jasmine rice
  • 1 teaspoon sesame seeds

Instructions

  1. Preheat the oven to 425 degrees.
  2. Spray a sheet pan with cooking spray and set aside.
  3. In a large bowl combine the mayonnaise, sour cream, honey, soy sauce, sriracha, salt, and pepper. Whisk until smooth. Set aside.
  4. To make the meatballs combine the ground beef, breadcrumbs, ginger, scallions, soy sauce, salt, and pepper. Mix well with your hands to combine.
  5. Roll the beef mixture into 16 meatballs.
  6. Place the meatballs on the prepared baking sheet. Bake for 15-18 minutes or until cooked through.
  7. Meanwhile, cook the rice according to the package directions.
  8. Once the meatballs are cooked, remove them from the oven and put them into the bowl with the sauce. Toss to coat the meatballs.
  9. Divide the rice between 4 bowls. Top each bowl with 4 meatballs and drizzle with the remaining sauce.
  10. Sprinkle the tops of the meatballs with the sesame seeds and serve with roasted vegetables if desired.
