Waffle Ice Cream Sandwiches

Crisp Belgium waffles with a hint of cinnamon sandwiched with cool vanilla ice cream rolled in colorful sprinkles for a fun summer treat!

Ingredients

For the waffles:

  • 2 c. flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 3 Tablespoon sugar I used Dixie Crystals
  • 1 egg
  • 1 teaspoon vanilla
  • 1⅓ c. milk

For the ice cream sandwiches:

  • 1 pint vanilla ice cream
  • Sprinkles

Instructions

  • Heat a waffle iron.
  • In a large bowl combine the flour, baking soda, baking powder, cinnamon, salt, and sugar. Mix well.
  • In a medium bowl combine the egg, vanilla, and milk. Mix well.
  • Pour the milk mixture into the flour mixture and whisk until smooth.
  • Pour ¾ cup of the batter onto the waffle iron and cook until the light tells you it is done. Repeat until all batter is used.
  • Cool waffles completely.
  • Meanwhile, remove the ice cream from the freezer 10 minutes before ussing.
  • Place 2 waffles on a cutting board. Divide the pint of ice cream in half and spread half of the ice cream on each of the two waffles.
  • Line up the cut marks and put another waffle on top of each of the ice cream waffles.
  • Quickly cut on the cut lines so that each waffle now makes 4 waffles sandwiches.
  • Pour the sprinkles onto a dish. Quickly dip one or two sides of each waffle sandwich in the sprinkles if desired.
  • Freeze for 15-20 minutes to firm up the ice cream then serve.
