Butterscotch Brown Butter Banana Bread with Oats

Ingredients

  • 1/2 c. 1 stick butter, softened
  • 2/3 c. brown sugar
  • 2 eggs
  • 1 1/2 c. all purpose flour
  • 2 teaspoons baking powder
  • ¾ c. oats
  • 2 bananas
  • ½ c. butterscotch chips

Instructions

  • Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray and set aside.
  • In a small skillet heat the butter over medium heat, stirring occasionally until the butter begins to brown. Remove from heat and allow to cool for 5 minutes.
  • In a large bowl combine the butter and brown sugar. Add in the eggs one at a time, stirring well after each addition.
  • In a small bowl combine the flour, baking powder, and oats. Add the flour mixture to the butter mixture and mix until well combined.
  • Stir in the bananas, mixing well. Fold in the butterscotch chips.
  • Spread the batter into the prepared pan. Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.
  • Cool completely before serving.
