Soft Brown Sugar Cookies

A cookie made with plenty of brown sugar and is cooked until soft in the middle but firm on the edges.

Ingredients

  • 2 c. flour
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon salt
  • 3/4 c. butter softened
  • 1 1/4 c. brown sugar
  • 1 egg
  • 1 Tablespoon vanilla
  • 1/3 c. sugar for rolling

Instructions

  • In a large bowl combine the flour, baking soda, cornstarch, cinnamon, nutmeg, and salt. Set aside.
  • In a medium bowl whisk the butter and brown sugar together until smooth.
  • Stir in the egg and mix well. Mix in the vanilla.
  • Pour the wet ingredients into the dry ingredients and mix well.
  • Place the dough in plastic wrap and refrigerate at least 2 hours or up to 48 hours.
  • Remove the dough from the refrigerator and preheat the oven to 325 degrees.
  • Pour the sugar in a shallow dish.
  • Roll 2 tablespoons of dough into a ball and then roll in the sugar.
  • Bake for 8 minutes.
  • Remove from oven and press the back of a spoon into the center of each cookie. Bake for 3-4 additional minutes.
  • Remove from oven and cool on the cookie sheet for 2 minutes. Remove to a wire rack and cool completely.
