Zoodles with Vodka Sauce
Zucchini noodles or "Zoodles" made with garlic and vodka sauce for a low calorie and gluten free meal!

Ingredients

large zucchini
2
teaspoons
olive oil
1
teaspoon
sea salt
1
teaspoon
black pepper
3
garlic cloves
minced
1/2
c.
vodka sauce
2
Tablespoons
Parmesan cheese
Instructions
Cut the ends off the zucchini and then cut in half.
Using a spiralizer, cut the zucchini into noodles.
Heat the olive oil in a medium skillet over medium heat. Add the zoodles and sprinkle with salt and pepper.
Saute the zoodles for 2 minutes, turning frequently. Add the garlic and cook for an additional 1-2 minutes.
Remove from heat and toss with the vodka sauce.
Divide into two bowl, sprinkle with Parmesan cheese, and enjoy!
