Zoodles with Vodka Sauce

Zucchini noodles or "Zoodles" made with garlic and vodka sauce for a low calorie and gluten free meal!

Ingredients

  • 1 large zucchini
  • 2 teaspoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 3 garlic cloves minced
  • 1/2 c. vodka sauce
  • 2 Tablespoons Parmesan cheese

Instructions

  • Cut the ends off the zucchini and then cut in half.
  • Using a spiralizer, cut the zucchini into noodles.
  • Heat the olive oil in a medium skillet over medium heat. Add the zoodles and sprinkle with salt and pepper.
  • Saute the zoodles for 2 minutes, turning frequently. Add the garlic and cook for an additional 1-2 minutes.
  • Remove from heat and toss with the vodka sauce.
  • Divide into two bowl, sprinkle with Parmesan cheese, and enjoy!
