Gourmet Pita Pizzas with Figs and Prosciutto

Toufayan pitas make a crispy base for these gourmet pita pizzas topped with goat cheese, prosciutto, spinach, and fresh figs.

Ingredients

  • 2 Toufayan pitas your favorite flavor
  • 1 Tablespoon olive oil
  • salt and pepper
  • 1/4 c. cheese use either goat cheese or blue cheese
  • 1/4 c. fresh spinach chopped
  • 2-3 slices of prosciutto chopped
  • 2 figs thinly sliced
  • balsamic vinegar

Instructions

  • Preheat the oven to 400 degrees.
  • Brush one side of the pitas with olive oil. Sprinkle with salt and pepper.
  • Spray a cookie sheet and place the pitas, oil side up, on the pan. Bake for 5 minutes.
  • Remove from the oven and divide the cheese between the two pitas. Sprinkle with spinach and top with prosciutto.
  • Bake for 10 minutes or until the prosciutto looks crisp and the pitas are golden brown.
  • Quickly top the pita pizzas with sliced fresh figs and drizzle with balsamic vinegar.
  • Cut each pita into 4 pieces and serve hot.
