Cinnamon Walnut Icebox Cookies

A tasty slice and bake icebox cookie made with walnuts and cinnamon. These are perfect for holiday platters or cookie exchanges!

Ingredients

For the cookies:

  • 2 sticks butter softened
  • 3/4 c. sugar
  • 1/3 c. brown sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 2 1/3 c. flour
  • 2 teaspoons baking powder
  • 1 teaspoon sea salt
  • 2 teaspoons cinnamon
  • 1 c. chopped walnuts

For the cinnamon sugar mixture:

  • 1/4 c. sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon sea salt

Instructions

  • In a large bowl cream the butter, sugar, and brown sugar until smooth.Using a stand mixer or
  • Add egg and vanilla and beat well.
  • In a medium bowl combine the flour, baking powder, salt, and cinnamon.
  • Add the flour mixture to the butter mixture and mix until well combined.
  • Fold in the walnuts.
  • Pour the dough out onto a sheet of plastic wrap and wrap it up in a ball form. Chill for one hour.
  • Remove the dough from the refrigerator and divide in half. Place each half on a sheet of waxed paper. Shape the dough into a 6 log using the wax paper to help you roll it up.
  • Twist the edges of the waxed paper to seal it. Place in the freezer for 2 hours (or overnight). If storing longer then overnight wrap in plastic wrap as well.
  • Remove from freezer and let it sit out for 5 minutes to make it easier to slice.
  • Preheat the oven to 350 degrees.
  • In a small bowl combine the cinnamon, sugar, and sea salt.
  • Roll the logs in the sugar mixture pressing the cinnamon/sugar onto outside of log.
  • Slice ¼ inch thick and bake for 12 to 14 minutes.
  • Cool completely on a wire rack.
