Christmas is coming the goose is getting fat.  Yep, that song is firmly stuck in my head this week and I’m having a hard time believing that Christmas will be here in just 5 weeks!  Usually by this point in the year I’ve tried several Christmas cookies to see which ones I want on my list.  So far this year I’ve made one Christmas cookie and it’s this one.

Cinnamon Walnut Icebox Cookies: Make the dough now and bake lateer!

I usually make a few simple cookies and then a few pretty complex cookies.  This is one of the easier cookies to make.  I like making icebox cookies because you can make the dough in advance, freeze it, then take it out when you are ready to use it.   It makes it nice because I can make the dough a week or two ahead of time then when I’m super busy without much time I can just pull it out, slice it, and bake it.

These cookies are a simple dough studded with chopped walnuts and flavored with cinnamon.   Before slicing and baking they are also rolled in a cinnamon, sugar, and salt mixture.  This makes the edges crisp and the middle of the cookies soft and chewy.

These cinnamon cookies are great for Christmas cookie trays because they stay fresh for a week or so and are sturdy enough to be transferred between plates and platters.  They would also make a great holiday cookie exchange cookie because they are something a little different and they hold up well.

Cinnamon Walnut Icebox Cookies

Yield: 2 dozen
Prep Time: 15 minutes
Cook Time: 14 minutes
Total Time: 29 minutes

A tasty slice and bake icebox cookie made with walnuts and cinnamon. These are perfect for holiday platters or cookie exchanges!

Ingredients

For the cookies:

  • 2 sticks butter, softened
  • 3/4 c. sugar
  • 1/3 c. brown sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 2 1/3 c. flour
  • 2 teaspoons baking powder
  • 1 teaspoon sea salt
  • 2 teaspoons cinnamon
  • 1 c. chopped walnuts

For the cinnamon sugar mixture:

  • 1/4 c. sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon sea salt

Instructions

  1. In a large bowl cream the butter, sugar, and brown sugar until smooth.Using a stand mixer or
  2. Add egg and vanilla and beat well.
  3. In a medium bowl combine the flour, baking powder, salt, and cinnamon.
  4. Add the flour mixture to the butter mixture and mix until well combined.
  5. Fold in the walnuts.
  6. Pour the dough out onto a sheet of plastic wrap and wrap it up in a ball form. Chill for one hour.
  7. Remove the dough from the refrigerator and divide in half. Place each half on a sheet of waxed paper. Shape the dough into a 6 log using the wax paper to help you roll it up.
  8. Twist the edges of the waxed paper to seal it. Place in the freezer for 2 hours (or overnight). If storing longer then overnight wrap in plastic wrap as well.
  9. Remove from freezer and let it sit out for 5 minutes to make it easier to slice.
  10. Preheat the oven to 350 degrees.
  11. In a small bowl combine the cinnamon, sugar, and sea salt.
  12. Roll the logs in the sugar mixture pressing the cinnamon/sugar onto outside of log.
  13. Slice ¼ inch thick and bake for 12 to 14 minutes.
  14. Cool completely on a wire rack.

  1. Im going to have to start freezing cookie dough in advance for my holiday baking, it should save me some time! Im just always afraid it will taste like freezer, I need to be brave!

  2. You just had to add that song in the beginning. Now I can’t get it out of my head either! lol I haven’t made icebox cookies in ages and I forgot how easy and convenient they are. Your combo with the walnuts and salty cinnamon sugar on the outside sounds delish. I think I see icebox cookies in my future.
