In a small bowl combine the salt, pepper, and Chinese 5 spice. Rub all over the pork loin and set aside.
In the slow cooker mix the soy sauce and chicken broth. Whisk in brown sugar, ginger,and garlic.
Put the pork roast in slow cooker. Place the onions, mushrooms, and bell peppers all around it.
Cook on low for 6-8 hours.
When there is 1 hour left in cooking time, remove the pork from the slow cooker. Shred the pork using two fork. Place back in the slow cooker and continue cooking for 1 hour.
To serve, place rice in bottom of a bowl, place pork on top and ladle sauce over top. Serve with Sriracha.
