Slow Cooker Asian Pork

Slow cooker pork roast is made with a combination of spices, a hint of sweet brown sugar, and just a touch of spicy Sriracha sauce.

Ingredients

  • 1 teaspoon Chinese five-spice powder optional
  • 1 teaspoon black pepper
  • 1 teaspoon Kosher salt
  • 1 2-3 lb. boneless pork roast
  • 1 c. low-sodium soy sauce
  • 2 c. chicken broth
  • 3 Tablespoons brown sugar packed
  • 1 Tablespoons grated fresh ginger
  • 3 garlic cloves minced
  • 1 teaspoon Sriracha or more to taste
  • 8 oz mushrooms sliced
  • 1 onion cut into thin slices
  • 1 green bell pepper cut into slices
  • 1 red bell pepper cut into slices

Instructions

  • In a small bowl combine the salt, pepper, and Chinese 5 spice. Rub all over the pork loin and set aside.
  • In the slow cooker mix the soy sauce and chicken broth. Whisk in brown sugar, ginger,and garlic.
  • Put the pork roast in slow cooker. Place the onions, mushrooms, and bell peppers all around it.
  • Cook on low for 6-8 hours.
  • When there is 1 hour left in cooking time, remove the pork from the slow cooker. Shred the pork using two fork. Place back in the slow cooker and continue cooking for 1 hour.
  • To serve, place rice in bottom of a bowl, place pork on top and ladle sauce over top.  Serve with Sriracha.
