P reheat the oven to 350 degrees. Spray a Bundt cake with cooking spray and set aside.
In a large bowl cream together the butter and sugar until well combined.
Add the eggs in one at a time, stirring well after each addition.
Stir in the applesauce, apple cider, and vanilla.
In a medium bowl combine the flour, baking powder, salt, and apple pie spice.
Add half of the flour mixture to the butter mixture and mix until well combined.
Add the remaining flour mixture and mix until the batter is smooth.
Spread the batter into the prepared pan and bake for 50 minutes or until a toothpick inserted into the center comes out clean.
Cool in the pan for 15 minutes. Run a butter knife around the edges of the pan and flip onto a wire rack to cool completely.
To make the syrup combine the apple cider, brown sugar, and butter in a medium saucepan over medium heat. Cook until the mixture is thick and syrupy, about 10 minutes.
Remove from heat and stir in the vanilla and cinnamon.
Poke holes all over the top of the Bundt cake using a skewer.
Pour the syrup over top of the cake and then sprinkle the coarse sugar over the top.
Wait at least 30 minutes before cutting the cake and serving.
