Apple Cider Bundt Cake

Apple Cider Bundt Cake is a moist and delicious Bundt cake filled with applesauce and apple cider that’s covered in apple cider syrup for a triple punch of apple goodness.

Every year I get so excited when fall rolls around.  I love all things apples and stock up immediately.  While I typically have apples at the house all year round when fall hits I get apple cider, apple dumplings, and caramel apple everything.

So when I saw  recipe for Apple Cider Bundt Cake that was soaked in apple cider syrup I knew I had to make it immediately.   Bundt Cakes are one of my favorite easy cakes to make and the apple cider flavor sounded amazing. 

The original recipe had applesauce in the cake but I decided to give mine even more apple cider flavor by adding apple cider and applesauce to the cake.   Then I put the apple cider syrup over the top of the cake.

Ingredients:

  • butter
  • sugar
  • eggs
  • applesauce
  • apple cider
  • vanilla
  • flour
  • baking powder
  • salt
  • apple pie spice
  1.  To make the cake preheat the oven to 350 degrees.   Spray a Bundt cake with cooking spray and set aside.
  2. In a large bowl cream together the butter and sugar until well combined.
  3. Add the eggs in one at a time, stirring after each addition.
  4. Stir in the applesauce, apple cider, and vanilla.   The mixture may look a little curdled but it will be fine once you add in the flour mixture.
  5. In a medium bowl combine the flour, baking powder, salt, and apple pie spice.
  6. Add half of the flour mixture to the butter mixture and mix well.   Add the remaining flour mixture and mix until the batter is smooth.
  7. Spread the batter into the prepared pan and bake for 50 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 15 minutes then run a butter knife around the edges of the pan and flip onto a wire rack to cool completely.
  9. At this point you will make the apple cider syrup and pour it over top of the cake.

The Bundt baked up beautifully.  I could smell the apples coming from it so I knew I made a good choice by using the apple cider and the applesauce in the cake.

I was undecided as to whether to simply soak the cake in the apple cider syrup or to put a glaze on top.  I finally went with just the syrup because the Bundt cake was so browned and gorgeous it really didn’t need anything covering it up.

I don’t have apple pie spice, can I substitute something else?

You can make your own apple pie spice at home if you don’t have any on hand.  Combine 4 Tablespoons cinnamon, 1 1/2 teaspoon nutmeg, 1 teaspoon ginger, and 1 1/2 teaspoon of cardamom and mix well.   If you don’t have all of those spices just use the cinnamon and nutmeg and it will give you a similar, though not the same, flavor.

What type of apple cider should I buy?

It really doesn’t matter.  You can buy it fresh from the source or buy it at the grocery store.   Because you are baking and cooking it there isn’t that much of a difference.  When I’m drinking apple cider I want it to be fresh from the orchard but baking with it, you can use whatever it is you can find.

Could I put a glaze on top instead of the apple cider syrup?

Sure!  I think a caramel glaze would be perfect on top of this or even a caramel apple cider glaze.   Mix together 1 cup of powdered sugar with a few tablespoons of caramel sauce or 1 tablespoon caramel sauce and 1 tablespoon of apple cider and mix well.  Drizzle over top of the cake and let harden 15 minutes.

Can I bake this in a regular cake pan?

You can but the baking times are going to change.  I can tell you that the batter will fit in two 9 inch cake pans or one 9 x 13 inch baking dish.   I cannot tell you how long it will take you to bake them so you will need to keep an eye on them and test them with a toothpick for doneness.

While you can simply pour the apple cider syrup over top of the cake I poked holes in the cake so that the syrup would soak into it.  Then I quickly sprinkled sparkling sanding sugar over top to give it a fun finish.

I cut the cake and the smell was incredible.   I took my first bite and it was perfect for fall.   Lots of apple and apple cider flavor mixed with butter and sugar.   This is one of my favorite Bundt cakes to date and I plan on making it again soon!

Ingredients

For the cake:

  • 1 c. (2 sticks) butter, softened
  • 2 c. sugar
  • 3 eggs
  • 1/2 c. applesauce
  • 1/2 c. apple cider
  • 1 Tablespoon vanilla
  • 2 1/2 c. flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons apple pie spice

For the apple cider syrup:

  • 3/4 c. apple cider
  • 3/4 c. brown sugar
  • 1 Tablespoon butter
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • coarse sanding sugar

Instructions

  1. P reheat the oven to 350 degrees.   Spray a Bundt cake with cooking spray and set aside.
  2. In a large bowl cream together the butter and sugar until well combined.
  3. Add the eggs in one at a time, stirring well after each addition.
  4. Stir in the applesauce, apple cider, and vanilla.  
  5. In a medium bowl combine the flour, baking powder, salt, and apple pie spice.
  6. Add half of the flour mixture to the butter mixture and mix until well combined.  
  7. Add the remaining flour mixture and mix until the batter is smooth.
  8. Spread the batter into the prepared pan and bake for 50 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 15 minutes. Run a butter knife around the edges of the pan and flip onto a wire rack to cool completely.
  10. To make the syrup combine the apple cider, brown sugar, and butter in a medium saucepan over medium heat. Cook until the mixture is thick and syrupy, about 10 minutes.
  11. Remove from heat and stir in the vanilla and cinnamon.
  12. Poke holes all over the top of the Bundt cake using a skewer.
  13. Pour the syrup over top of the cake and then sprinkle the coarse sugar over the top.
  14. Wait at least 30 minutes before cutting the cake and serving.
