Baked Blueberry Oatmeal

A delicious and hearty baked oatmeal studded with blueberries and topped with a sweet nut and flax seed topping is perfect for a family brunch.

Ingredients

For the oatmeal:

  • 3 c. oats
  • 2 teaspoons baking powder
  • 1 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 c. Dixie Crystals brown sugar
  • 2 eggs
  • 1 teaspoon orange zest
  • 1 teaspoon orange extract
  • 1 1/2 c. milk
  • 1 c. blueberries

For the topping:

  • 1/2 c. walnuts chopped
  • 1/3 c. flax seeds
  • 2 Tablespoons honey
  • 1 Tablespoon Dixie Crystals brown sugar
  • 1 Tablespoon vegetable oil

Instructions

  • Preheat the oven to 375 degrees. Spray a 9 x 13 baking dish with cooking spray.
  • In a large bowl combine the oats, baking powder, sea salt, cinnamon, ginger, and brown sugar.
  • In a medium bowl beat the eggs. Add in the orange zest, orange extract, and milk.
  • Fold in the blueberries.
  • Pour the liquid ingredients into the bowl with the dry ingredients and mix well. Pour the oatmeal into the prepared baking dish.
  • In a small bowl combine all the ingredients for the topping. Mix well and sprinkle over top of the oatmeal.
  • Bake for 25-30 minutes or until golden brown.
  • Remove from oven and cut into 8 large rectangles.
