Brown Sugar Cinnamon Cupcakes

Ingredients

For the cupcakes:

  • 1 stick butter softened
  • 3/4 c. brown sugar
  • 1/2 c. sugar
  • 2 teaspoons cinnamon
  • 2 eggs
  • 1 Tablespoon vanilla
  • 2 c. flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 c. vanilla yogurt
  • 1/2 c. milk

For the frosting:

  • 2 sticks butter softened
  • 4 c. powdered sugar
  • 1 Tablespoon cinnamon or 1 Tablespoon brown sugar cinnamon syrup
  • 1 Tablespoon vanilla
  • 2 Tablespoon milk

Instructions

  • Preheat the oven to 350 degrees.
  • Place cupcake liners in 16 muffin cups. Set aside.
  • In a large bowl combine the butter, brown sugar, sugar, and cinnamon. Mix well.
  • Add in the eggs and stir until combined.
  • Mix in the vanilla.
  • In a medium bowl combine the flour, baking powder, and salt.
  • Pour half the flour mixture into the butter mixture and mix well.
  • Add in the yogurt and milk and mix until combined.
  • Pour the remaining flour mixture in and mix until well combined.
  • Divide the mixture because the muffin cups filling each 3/4 of the way full.
  • Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and cool completely.
  • To make the frosting beat the butter in a large bowl with a mixer.
  • Add in the powdered sugar 1/2 cup at a time until the consistency is thick.
  • Stir in the cinnamon, vanilla, and milk. Beat until smooth.
  • Frost the cupcakes. Sprinkle with cinnamon and serve.
