Brown Sugar Pecan Cookies

Brown Sugar Pecan Cookies are soft cookies made with pecans and brown sugar then topped with an easy brown sugar frosting and a pecan half.

Ingredients

For the cookies:

  • 1 c. 2 sticks butter, softened
  • 1/2 c. sugar
  • 1/2 c. brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 c. flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 c. chopped pecans
  • 36 pecan halves

For the frosting:

  • 1 c. brown sugar
  • 1/2 c. heavy cream or whole milk
  • 1 Tablespoon butter
  • 2 c. powdered sugar

Instructions

  • Preheat the oven to 350 degrees.
  • In a large bowl cream together the butter, sugar, and brown sugar.
  • Add in the egg and vanilla and beat until well combined.
  • Add the flour, baking soda, and salt and mix until combined.
  • Fold in the chopped pecans.
  • Shape the dough into 1 inch balls and place them 2-3 inches apart on a baking sheet.
  • Bake for 10 minutes or until set (not glossy) and lightly browned.
  • Remove from oven and cool for 2-3 minutes before removing to a cooling rack to cool completely.
  • To make the frosting combine the brown sugar and cream in a small pot over medium heat. Bring the mixture to a low boil, stirring constantly, for 3-4 minutes.
  • Remove the pot from heat and stir in the butter.
  • Stir in 1 1/2 cups of powdered sugar and beat until smooth. If frosting is too thin add more sugar while keeping in mind the frosting will harden as it cools.
  • Spread each cookie with 1 tablespoon of frosting and top with a pecan half.
