Burgers with Blueberry BBQ Sauce, Brie, and Lemon Shallot Aioli

Ingredients

For the Blueberry BBQ Sauce:

  • 1/2 c. blueberries
  • 3 Tablespoons balsamic vinegar
  • 1 Tablespoon coconut oil
  • 2 Tablespoons coconut sugar
  • 1/4 c. ketchup
  • 1 Tablespoon Worcestershire sauce
  • 2 garlic cloves minced
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt

For the Lemon Shallot Aioli:

  • 1/2 c. mayonnaise
  • 2 shallots minced
  • 2 garlic cloves minced
  • 1 Tablespoon lemon juice
  • 2 Tablespoons olive oil
  • salt and pepper

For the burgers:

  • 1 1/2 lb. lean ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt

For assembling:

  • 4 oz. brie sliced
  • 4 hamburger buns
  • Lettuce

Instructions

  • To make the blueberry BBQ sauce combine all ingredients in a small saucepan over medium high heat. Bring to a boil stirring frequently.
  • Boil for 3 minutes or until the blueberries begin to burst. Reduce heat to medium and cook for 5 minutes.
  • Pour the sauce through a fine mesh sieve and save the sauce. Discard the solids.
  • To make the aioli whisk together all ingredients and place in the refrigerator until ready to use.
  • To make the burgers heat a grill to medium high heat. Combine the ground beef, garlic, pepper, and salt. Form in to 4 patties.
  • Grill for 5 minutes per side or until cooked to your preferred doneness. Top with the Brie cheese and close the lid for 1 minute to melt the cheese. Remove from the grill.
  • Spread a tablespoon of the aioli on the bottom of a bun and top with the burger. Place a tablespoon of BBQ sauce on top and then a piece of lettuce. Top with the bun. Enjoy!
