Burgers with Blueberry BBQ Sauce, Brie, and Lemon Shallot Aioli

I recently joined a great group of foodies that have a “Chopped” like challenge every month but the food we always make are burgers.ย Since I’m a huge burger fan I thought this would be a fun way to challenge myself to make some new flavor combinations.ย ย My thought is that it couldn’t be too hard to put the ingredients together.
Boy was I wrong!ย ย My first month and the ingredients we had to use were blueberries, shallots, cayenne pepper, and coconut.ย ย What?ย ย I wasn’t sure how in the world I was going to use coconut and blueberry in a savory burger recipe but I set out to do just that.ย I looked at hundreds of recipes and finally came up with one of my own.
Instead of using actual coconut I decided to use coconut oil.ย ย Since I thought maybe that was cheating a little I used coconut sugar as well.ย That way I had not one but two coconut ingredients in my burger recipe.ย ย I added the oil and sugar to the blueberries along with balsamic vinegar and made myself a tasty BBQ sauce.ย Don’t be fooled by the fruit and sweetness factor, this BBQ sauce is tangy and delicious!ย It’s also a bit spicy because of the cayenne pepper.
In addition to the Blueberry BBQ Sauce I made a Lemon Shallot Aioli.ย ย The tart citrus mixed with the onion flavor in the shallots along with the creamy mayonnaise was perfect to put on the burger bun.ย ย Then I added creamy Brie cheese on top.
For my burger I simply used my favorite beef (Certified Angus Beef brand) and added some salt, pepper, garlic, and Worcestershire sauce.ย I figured simple was better in this case because of all the other ingredients I was putting on my burger.ย ย I put it all together and took a tentative bite.
This Burgers with Blueberry BBQ Sauce, Brie, and Lemon Shallot Aioli was amazing!ย ย It was totally bursting with flavors but they all meshed so well together.ย There was sweet, tart, spicy, and creamy all in one awesome burger.ย ย I actually surprised myself with how good this one was.ย My husband and I each ate one and a half burgers because of how delicious they were.

Ingredients
For the Blueberry BBQ Sauce:
- 1/2 c. blueberries
- 3 Tablespoons balsamic vinegar
- 1 Tablespoon coconut oil
- 2 Tablespoons coconut sugar
- 1/4 c. ketchup
- 1 Tablespoon Worcestershire sauce
- 2 garlic cloves minced
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
For the Lemon Shallot Aioli:
- 1/2 c. mayonnaise
- 2 shallots minced
- 2 garlic cloves minced
- 1 Tablespoon lemon juice
- 2 Tablespoons olive oil
- salt and pepper
For the burgers:
- 1 1/2 lb. lean ground beef
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon salt
For assembling:
- 4 oz. brie sliced
- 4 hamburger buns
- Lettuce
Instructions
- To make the blueberry BBQ sauce combine all ingredients in a small saucepan over medium high heat. Bring to a boil stirring frequently.
- Boil for 3 minutes or until the blueberries begin to burst. Reduce heat to medium and cook for 5 minutes.
- Pour the sauce through a fine mesh sieve and save the sauce. Discard the solids.
- To make the aioli whisk together all ingredients and place in the refrigerator until ready to use.
- To make the burgers heat a grill to medium high heat. Combine the ground beef, garlic, pepper, and salt. Form in to 4 patties.
- Grill for 5 minutes per side or until cooked to your preferred doneness. Top with the Brie cheese and close the lid for 1 minute to melt the cheese. Remove from the grill.
- Spread a tablespoon of the aioli on the bottom of a bun and top with the burger. Place a tablespoon of BBQ sauce on top and then a piece of lettuce. Top with the bun. Enjoy!
