Ingredients
1
package
3 oz ramen noodles
1 1/2
c.
hot water
8
oz.
boneless chicken breasts
cut into 2 inch strips
1
Tablespoon
olive oil
1
bell pepper
chopped
1/2
large onion
chopped
1
c.
broccoli florets
3
garlic cloves
minced
1/2
c.
chicken broth
1/4
c.
soy sauce
1
teaspoon
salt
1
teaspoon
black pepper
Instructions
In a bowl combine the ramen noodles and the hot water. Let sit 5 minutes then drain.
In a large skillet heat half the olive oil over medium high heat. Add the chicken and stir fry for 7 minutes.
Move the chicken to the edges of the pan and add the remaining olive oil.
Add in the peppers, onions, broccoli, and garlic and saute for 5 minutes.
Add the chicken broth, soy sauce, salt, and pepper. Cook for 2-3 minutes.
Add in the ramen noodles and toss gently to combine.
