Preheat the oven to 375 degrees. Line 16 muffin cups with cupcake liners and set aside.
In a medium bowl combine the flour, baking powder, and salt. Mix and set aside.
In a large bowl cream together the butter and sugar.
Add in the egg and vanilla and mix well. Stir in the yogurt or sour cream.
Add half of the flour mixture to the butter mixture and mix well.
Add in the apples and cinnamon chips and mix until just combined.
Add remaining flour and mix until batter is combined.
Spoon the batter into the muffin cups filling just below the top.
Bake for 20-23 minutes or until a toothpick inserted into the center comes out clean.
Remove from oven and transfer to a wire rack to cool completely.
