Cinnamon Chip Apple Muffins

Whenever I go back to work in the fall I have a hard time with breakfast.  I’m used to eating and snacking whenever I want in the summer so breakfast is not a priority.

It’s hard for me to get back into eating actual breakfast foods for breakfast or making something to take with me in the mornings.  One of my favorite things to make are fruit muffins because they are easy to grab and go and are pretty filling.

I had a bowl of apples sitting on my counter so I decided to make Apple Muffins.  I debated whether or not to put a crumble on top of them but them I saw a bag of cinnamon chips sitting in my baking drawer.

Cinnamon chips are like chocolate chips but they are cinnamon flavored.   Since it’s fall I thought that the cinnamon chips would be perfect with the apples in the muffins.  Plus, it would sweetened the muffins up enough that they could be breakfast or dessert.

Ingredients:

  • flour
  • baking powder
  • salt
  • butter
  • sugar
  • eggs
  • vanilla
  • vanilla yogurt or sour cream
  • apple
  • cinnamon chips

To Make the Batter:  In a medium bowl combine the flour, baking powder, and salt.  Set aside.  In a large bowl cream together the butter and sugar.  Add in the egg and vanilla and mix well. Stir in the yogurt or sour cream.  Add half of the flour mixture to the butter mixture and mix well.  Add in the apples and cinnamon chips and mix until combined.  Add remaining flour and mix until batter is well combined.

These muffins were pretty easy to whip up.  I had all the ingredients already in my kitchen so it was just a matter of gathering them up and mixing everything together.

The original recipe calls for a crumble of top of the muffins but I didn’t think they needed it.  With the addition of the cinnamon chips the muffins are already sweet and spiced so the additional crumble wasn’t needed.

What are cinnamon chips?

Cinnamon chips are just like chocolate chips but they taste like cinnamon.  They are creamy, spicy, and taste of cinnamon.  I know that Hershey’s makes them but I’m not sure if there are other brands out there or not.

What type of apple should I use?

That is totally up to you.  If you want a sweeter muffin then go for a sweeter apple.  If you want it tart, try a tart apple.  My favorite apples to bake with are Honeycrisp, Granny Smith, Jonagold, Pink Lady, or Braeburn.

Can I make this into a bread?

You can bake this into a bread instead of muffins.   Make the batter as started and pour into a loaf pan.  Bake at 350 degrees for around 1 hour.

I put cupcake liners in the pan before baking because this makes the muffins easier to grab and go. You can just spray the muffin tin and put the batter right in it if desired.

The muffins smelled so good while they were baking.  I could really smell the cinnamon chips as they melted along with the sweetness of the muffins.  I was excited to try them.

These muffins are perfect for fall.   They are sweet yet spiced from the cinnamon chips.  The flavor of apple definitely comes through.

I thought they were a nice option for breakfast but they are also sweet enough to be eaten after dinner as dessert.  I like them with a cup of coffee to balance out the sweetness.

Cinnamon Chip Apple Muffins

Yield: 16 muffins
Prep Time: 15 minutes
Cook Time: 23 minutes
Total Time: 38 minutes

Ingredients

  • 2 c. flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 c. (1 stick) butter
  • 1 c. sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/3 c. vanilla yogurt or sour cream
  • 2 apples, chopped (about 1 1/2 cups)
  • 3/4 c. cinnamon chips

Instructions

  1. Preheat the oven to 375 degrees. Line 16 muffin cups with cupcake liners and set aside.
  2. In a medium bowl combine the flour, baking powder, and salt. Mix and set aside.
  3. In a large bowl cream together the butter and sugar. 
  4. Add in the egg and vanilla and mix well. Stir in the yogurt or sour cream.
  5. Add half of the flour mixture to the butter mixture and mix well. 
  6. Add in the apples and cinnamon chips and mix until just combined. 
  7. Add remaining flour and mix until batter is combined.
  8. Spoon the batter into the muffin cups filling just below the top.
  9. Bake for 20-23 minutes or until a toothpick inserted into the center comes out clean.
  10. Remove from oven and transfer to a wire rack to cool completely.

    1. Oh absolutely! Plain will work fine though. I just like the extra vanilla flavor that the vanilla yogurt gives to these muffins. If you want to add extract I’d add in about a teaspoon.

  1. The cinnamon chips are great to use in fall recipes. The flavors in these muffins are perfect for a comforting fall breakfast or snack.

  2. I agree that muffins are a perfect grab and go breakfast!! I’ve never baked with cinnamon chips, but I’m going to right that wrong with this recipe! These look delish!!
