Preheat the oven to 350 degrees.
Cook the bacon until done but not crispy. Chop into small pieces and set aside.
In a large bowl combine the oats, flax seeds, sunflower seeds, walnuts, almonds, bacon. Set aside.
In a small saucepan combine the coconut oil, honey, and cinnamon. Cook until just warm and pour over top of the oat mixture. Add in 1-2 teaspoons of the bacon grease as well as the sea salt and mix well to combine.
Pour the granola onto a greased baking sheet. Bake for 20-25 minutes, stirring once halfway through.
Remove from the oven and stir in the dates. Allow to cool for 20 minutes.
Break into pieces and store in an air tight container in the refrigerator for up to 1 week.
