Easy Crumbl Lemon Cookies

Giant Copycat Crumbl Lemon Cookies are soft, chewy, and bursting with fresh lemon flavor. They are finished off with a zesty butter and lemon glaze.

Ingredients

  • 1/2 c. 1 stick butter
  • ¾ c. granulated sugar
  • ¼ c. brown sugar
  • 1 large egg
  • 1 Tablespoon lemon juice
  • 1 Tablespoon lemon zest
  • 1 teaspoon lemon extract
  • 1 ¾ c. all purpose flour 225g
  • ¾ teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 Tablespoons butter
  • 1/3 c. powdered sugar
  • 1 Tablespoon lemon juice

Instructions

  • Preheat the oven to 350 degrees.
  • In a larger bowl cream the butter, sugar, and brown sugar. Add in the egg, lemon juice, lemon zest, and lemon extract and mix well.
  • In a medium bowl combine the flour, baking soda, and salt.
  • Add the flour mixture to the butter mixture and mix until just combined.
  • Divide the dough into 8 portions and place the on the baking sheet.
  • Bake for 10 minutes or until they have set.
  • Let cool on the baking sheet for 5 minutes then remove to a wire rack to cool completely.
  • In a small saucepan melt the butter, powdered sugar, lemon zest, and lemon juice over medium heat stirring constantly until the sugar dissolves.
  • Remove from heat and brush over cooled cookies.
