Easy Crumbl Lemon Cookies {Copycat}

Giant Copycat Crumbl Lemon Cookies are soft, chewy, and bursting with fresh lemon flavor. They are finished off with a zesty butter and lemon glaze.

Cookie bakeries are all the rage.   Being able to order huge, delicious cookies at a bakery or for delivery is quickly becoming a favorite dessert option.

Crumbl Cookies are one of these bakeries.  With a weekly rotating menu, there’s always a delicious array of cookies to purchase at one of their stores around the country.

I recently saw a recipe for the Lemon Cookies which looked so good.   I enjoy a sweet and tart lemon dessert so I was excited to give them a try.

The thing I love about the Copycat Crumbl cookies is that they are made with ingredients I usually have on hand.  They are also pretty easy to make.

Because they are really big I also only need to bake one batch which saves me time in the oven as well!   Who wants two dozen small cookies when you can have 8 to 10 giant cookies?

Ingredients:

  • butter
  • sugar
  • brown sugar
  • egg
  • lemon
  • lemon extract
  • flour
  • baking soda
  • salt
  • powdered sugar

To Make the Cookies:  Preheat the oven to 350 degrees.  In a large bowl cream together the butter, sugar, and brown sugar.  Add in the egg, lemon juice, lemon zest, and lemon extract and mix until combined.  Mix in the flour, baking soda, and salt until just mixed. Scoop the dough into 9 equal sized cookies.  Bake for 10-12 minutes then let cool on the baking sheet for 5 minutes.  Remove to a cooling rack.

These cookies have a chewy, sugar cookie base.   It’s flavored with lemon juice, lemon zest, and lemon extract. 

Baking the cookies then letting them cool for a few minutes before removing them to a baking rack helps to keep the centers chewy.  It also allows the edges to be slightly crisp.

The acidity of the lemon juice and zest balances out the two types of sugar.  It makes for a sweet and tart cookie.

Will the lemon glaze harden?

Yes!   The lemon glaze will set after about 30 minutes in a regular climate.  If you live in a humid climate it may take over an hour.

How do you store the lemon cookies?

The cookies can be stored in an airtight container at room temperature for up to 4 days.  Do not put the lemon slices on top of them until ready to serve otherwise they will cause the cookies to become wet as they sit.  You can also store the cookies in an airtight container in the refrigerator for up to 7 days.

Can you freeze the lemon cookies?

Yes you can.   After glazing the cookies let them sit until the glaze sets.  Place the cookies on a cookie sheet and freeze for one hour.  Wrap in plastic wrap and store in a freezer bag for up to 3 months.

Once the cookies have cooled make the glaze.  It’s a cooked glaze because you want the powdered sugar to dissolve. 

The glaze can be brushed on, spooned on, or the cookies can be dipped in it.  Placing half a lemon slice on top is a great way to decorate these cookies and it’s easy too!

Easy Crumbl Lemon Cookies

Giant Copycat Crumbl Lemon Cookies are soft, chewy, and bursting with fresh lemon flavor. They are finished off with a zesty butter and lemon glaze.

Ingredients

  • 1/2 c. (1 stick) butter
  • ¾ c. granulated sugar
  • ¼ c. brown sugar
  • 1 large egg
  • 1 Tablespoon lemon juice
  • 1 Tablespoon lemon zest
  • 1 teaspoon lemon extract
  • 1 ¾ c. all purpose flour (225g)
  • ¾ teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 Tablespoons butter
  • 1/3 c. powdered sugar
  • 1 Tablespoon lemon juice

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a larger bowl cream the butter, sugar, and brown sugar. Add in the egg, lemon juice, lemon zest, and lemon extract and mix well.
  3. In a medium bowl combine the flour, baking soda, and salt.
  4. Add the flour mixture to the butter mixture and mix until just combined.
  5. Divide the dough into 8 portions and place the on the baking sheet.
  6. Bake for 10 minutes or until they have set.
  7. Let cool on the baking sheet for 5 minutes then remove to a wire rack to cool completely.
  8. In a small saucepan melt the butter, powdered sugar, lemon zest, and lemon juice over medium heat stirring constantly until the sugar dissolves.
  9. Remove from heat and brush over cooled cookies.
