Grilled Garlic Parmesan Potato Foil Packets

Tender potatoes grilled along with red onions in a drizzle of olive oil along with garlic and Parmesan makes for an easy and delicious side dish that can be grilled along with any protein!

Ingredients

  • 2 lb. potatoes cut into 1 inch pieces
  • 1/2 red onion sliced
  • 2 Tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 garlic cloves minced
  • 1/3 c. Parmesan cheese shredded

Instructions

  • Heat a grill to medium high heat.
  • In a large bowl combine the potatoes, red onions, olive oil, salt, pepper, garlic, and half of the Parmesan cheese. Toss to combine.
  • Divide the potato mixture between two large pieces of foil.
  • Fold the foil on top of the potatoes to form a foil packet.
  • Grill for 25-30 minutes flipping the potatoes once.
  • As soon as the potatoes come off the grill open up the packets and sprinkle each one with remaining Parmesan cheese and close the package for 3-5 minutes.
  • Divide each packet between 3 or 4 plates and enjoy.
