Tender potatoes grilled along with red onions in a drizzle of olive oil along with garlic and Parmesan makes for an easy and delicious side dish that can be grilled along with any protein!
In a large bowl combine the potatoes, red onions, olive oil, salt, pepper, garlic, and half of the Parmesan cheese. Toss to combine.
Divide the potato mixture between two large pieces of foil.
Fold the foil on top of the potatoes to form a foil packet.
Grill for 25-30 minutes flipping the potatoes once.
As soon as the potatoes come off the grill open up the packets and sprinkle each one with remaining Parmesan cheese and close the package for 3-5 minutes.
Divide each packet between 3 or 4 plates and enjoy.
