Herbed Yorkshire Pudding

Ingredients

  • 1 1/2 c. whole milk
  • 3 eggs
  • salt and pepper
  • 2 Tablespoons butter melted
  • 1 1/2 c. flour
  • 2 Tablespoons finely chopped oregano
  • 1 Tablespoon finely chopped parsley
  • 1 1/2 teaspoons finely chopped rosemary
  • 2-3 Tablespoons bacon fat or butter

Instructions

  • Place a muffin tin in the oven and preheat to 400 degrees.
  • In a large bowl whisk together the milk, eggs, salt, and pepper.
  • Whisk in the melted butter.
  • Add in the flour and mix until smooth.
  • Stir in the oregano, parsley, and rosemary.
  • Allow the batter to sit for 10 minutes.
  • Remove the hot muffin tin from the oven. Brush each cup with bacon fat.
  • Divide the batter between the cups filling them about halfway full.
  • Bake for 35 minutes or until the popovers have risen and are golden brown. Do not open the oven to check on them!
  • Remove from the oven and brush with extra bacon fat and sprinkle with salt.
  • Allow to cool for 5 minutes then remove.
  • Serve warm or at room temperature.
