Herbed Yorkshire Pudding
A delicious herbed popover that is great served with beef.

Ingredients
1 1/2
c.
whole milk
3
eggs
salt and pepper

Tablespoons
butter
melted
1 1/2
c.
flour
2
Tablespoons
finely chopped oregano
1
Tablespoon
finely chopped parsley
1 1/2
teaspoons
finely chopped rosemary
2-3
Tablespoons
bacon fat
or butter
Instructions
Place a muffin tin in the oven and preheat to 400 degrees.
In a large bowl whisk together the milk, eggs, salt, and pepper.
Whisk in the melted butter.
Add in the flour and mix until smooth.
Stir in the oregano, parsley, and rosemary.
Allow the batter to sit for 10 minutes.
Remove the hot muffin tin from the oven. Brush each cup with bacon fat.
Divide the batter between the cups filling them about halfway full.
Bake for 35 minutes or until the popovers have risen and are golden brown. Do not open the oven to check on them!
Remove from the oven and brush with extra bacon fat and sprinkle with salt.
Allow to cool for 5 minutes then remove.
Serve warm or at room temperature.
