Insomnia Snickerdoodle Cookies

Ingredients

  • 1 c. butter softened
  • 1 1/4 c. sugar
  • 1 egg
  • 2 Tablespoons light corn syrup
  • 1 teaspoon vanilla extract
  • 2 1/2 c. flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 c. sugar
  • 2 teaspoons cinnamon

Instructions

  • Preheat the oven to 350 degrees.
  • In a large bowl cream together the butter and sugar. 
  • Add in the egg, corn syrup, and vanilla.  Mix until well combined.  
  • Add in the flour, baking soda, and salt
    and mix until a dough forms.
  • Roll 2-3 tablespoons of dough into a ball and place on a baking sheet. Repeat with remaining dough.
  • Combine the sugar and cinnamon in a small bowl and mix well.
  • Roll each ball into the cinnamon sugar mixture and place back on the cookie sheet.
  • Bake for 11-13 minutes or until the cookies just turn golden brown on the edges.
  • Remove from oven and cool 2-3 minutes before removing the cookies to a wire cooling rack.
