Insomnia Snickerdoodle Cookies {Copycat Recipe}

Sweet and chewy snickerdoodle cookies have a crisp, buttery edge that’s rolled in cinnamon and sugar with a chewy center that make these snickerdoodles perfection!

I love cookies.   I love to make them, to bake them, to eat them, and to gift them.  They are easy to make and my son enjoys helping to make them as well.

I’ve been on a copycat cookie kick lately.  I’ve been seeing all these delicious cookies and I just have to make them.  So far I haven’t been disappointed.

When I came across these Insomnia Snickerdoodle Cookies I was excited.  They looked to be the perfect snickerdoodle.  I’ve had trouble with these cookies in the past so I’ve been looking for a good cookie recipe.

I’ve never heard of Insomnia but it’s one of those cookie bakeries that will deliver fresh, gourmet cookies right to your door. You can also get them shipped all over the United States.

Ingredients:

  • butter
  • sugar
  • egg
  • corn syrup
  • vanilla extract
  • flour
  • baking soda
  • salt
  • cinnamon

To Make the Cookies:  Preheat the oven to 350 degrees.   In a bowl cream together the butter and sugar.  Add in the egg, corn syrup, and vanilla.  Mix well.   Add in the flour, baking soda, and salt and mix until a dough forms. Roll 2-3 tablespoons of dough into a ball and roll into a cinnamon and sugar mixture.  Bake for 11-13 minutes or until golden brown on the edges.

These cookies were easy to make and they didn’t require any freezing time. The main difference between this recipe and others I’ve made is that it has corn syrup in it.

I wasn’t sure what the corn syrup would do in the recipe but whatever it was supposed to do it worked! The flavor of these cookies is amazing.

These cookies are a bit bigger than regular cookies. I think that’s the way cookie shops are going and I am ok with it! Who wouldn’t want a huge, delicious cookie?

What is a snickerdoodle?

Snickerdoodles are cookies usually made with butter, sugar, and flour that are rolled in cinnamon sugar before baking. 

Can I make these cookies smaller?

Yes, you can make them the size of regular cookies if you’d like, just check on them at 9 or 10 minute mark to see if they are cooked.  The edges should start browning when you take them out.

How do you store the cookies?

Store the cookies in an air tight container for up to 4 days. 

Can I freeze the snickerdoodles?

You can freeze these cookies. Place the baked cookies on a baking sheet in a single layer.  Put the sheet in the freezer for 1 hour to freeze them individually.  Then wrap each in plastic wrap and place in a freeze bag for up to 6 months.

The cookies have a firm edge with a super soft middle.  They are softer than most snickerdoodle cookies I’ve had but the flavor is the same cinnamon and sugar.

They are also rolled in the cinnamon and sugar mixture before being baked.  This helps to make a bit of a crust on the cookies as they bake. It also allows the cookie to keep its soft, chewy center.

Insomnia Snickerdoodle Cookies

Ingredients

  • 1 c. butter, softened
  • 1 1/4 c. sugar
  • 1 egg
  • 2 Tablespoons light corn syrup
  • 1 teaspoon vanilla extract
  • 2 1/2 c. flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 c. sugar
  • 2 teaspoons cinnamon

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl cream together the butter and sugar. 
  3. Add in the egg, corn syrup, and vanilla.  Mix until well combined.  
  4. Add in the flour, baking soda, and salt
    and mix until a dough forms.
  5. Roll 2-3 tablespoons of dough into a ball and place on a baking sheet. Repeat with remaining dough.
  6. Combine the sugar and cinnamon in a small bowl and mix well.
  7. Roll each ball into the cinnamon sugar mixture and place back on the cookie sheet.
  8. Bake for 11-13 minutes or until the cookies just turn golden brown on the edges.
  9. Remove from oven and cool 2-3 minutes before removing the cookies to a wire cooling rack.

    3. I had never heard of Insomnia either. I thought you were going to tell us you couldn’t sleep one night so made these cookies instead LOL. They sound wonderful Heather.
