Preheat the oven to 350 degrees. Spray a 9 inch cake pan with cooking spray and place a parchment paper circle on the bottom. Set aside.
Add the sugar to a heavy bottomed saucepan and put on medium high heat. Leave it alone until the sugar begins to melt and then stir with a wooden spoon. Once it is melted and has turned amber add in the butter. Mix well and cook for 1-2 minutes.
Remove from heat and pour into the bottom of the prepared pan. Top with the jackfruit.
In a medium bowl combine the flour, baking powder, and salt. Mix well and set aside.
In a large bowl cream together the butter and brown sugar. Add in the eggs and vanilla and mix well.
Add the flour mixture to the butter mixture and mix until just combined.
Pour batter over top of the jackfruit caramel in the pan.
Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool for 10 minutes.
Run a butter knife around the edges and carefully invert onto a wire rack. Remove the parchment paper and cool completely.
