Jackfruit Upside Down Cake

A twist on Pineapple Upside Down Cake, use a tropical jackfruit instead!

Ingredients

For the topping:

  • 1/2 c. sugar
  • 6 Tablespoons butter
  • 1/2 lb. jackfruit flesh removed, seeded, and halved

For the cake:

  • 1 c. flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 c. butter
  • 1 c. brown sugar
  • 3 eggs
  • 1 teaspoon vanilla

Instructions

  • Preheat the oven to 350 degrees. Spray a 9 inch cake pan with cooking spray and place a parchment paper circle on the bottom. Set aside.
  • Add the sugar to a heavy bottomed saucepan and put on medium high heat. Leave it alone until the sugar begins to melt and then stir with a wooden spoon. Once it is melted and has turned amber add in the butter. Mix well and cook for 1-2 minutes.
  • Remove from heat and pour into the bottom of the prepared pan. Top with the jackfruit.
  • In a medium bowl combine the flour, baking powder, and salt. Mix well and set aside.
  • In a large bowl cream together the butter and brown sugar. Add in the eggs and vanilla and mix well.
  • Add the flour mixture to the butter mixture and mix until just combined.
  • Pour batter over top of the jackfruit caramel in the pan.
  • Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool for 10 minutes.
  • Run a butter knife around the edges and carefully invert onto a wire rack. Remove the parchment paper and cool completely.
