Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray and set aside.
Heat the oil in a medium skillet over medium heat. Add in the onion and peppers and saute for 3-5 minutes or until they begin to soften.
Add in the salt, pepper, and garlic and cook for 1 minute. Set aside.
In a large bowl combine this milk, dijon, Worcestershire sauce, and eggs. Mix well.
Add the beef, pork, crackers, and the vegetable mixture and mix together with your hands.
Spoon the mixture into the prepared pan and lightly press down to smooth the top.
In a small bowl whisk together the barbecue sauce, ketchup, brown sugar, vinegar, and hot sauce. Pour over top of the meatloaf (it will look like a lot but that's ok).
Bake for 1 hour and 10 minutes or until a thermometer reads 165 degrees. Remove from oven and let sit 10 minutes before cutting.
