Jeff Mauro's Meatloaf

A tasty meatloaf made with two kinds of meat, plenty of flavors, and topped with a sweet, spicy, and tangy sauce.

Ingredients

For the meatloaf:

  • 1 Tablespoon olive oil
  • 1 small onion finely diced
  • 1/2 bell pepper finely diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 garlic cloves minced
  • 1/3 c. milk
  • 1 Tablespoon dijon mustard
  • 2 Tablespoon Worcestershire sauce
  • 2 eggs
  • 1 lb. ground beef
  • 1 lb. ground pork
  • 1 c. coarsely crushed saltine crackers

For the glaze:

  • 1/2 c. barbecue sauce
  • 2 Tablespoons ketchup
  • 2 Tablespoons brown sugar
  • 1/4 c. apple cider vinegar
  • 1 Tablespoon hot sauce

Instructions

  • Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray and set aside.
  • Heat the oil in a medium skillet over medium heat. Add in the onion and peppers and saute for 3-5 minutes or until they begin to soften.
  • Add in the salt, pepper, and garlic and cook for 1 minute. Set aside.
  • In a large bowl combine this milk, dijon, Worcestershire sauce, and eggs. Mix well.
  • Add the beef, pork, crackers, and the vegetable mixture and mix together with your hands.
  • Spoon the mixture into the prepared pan and lightly press down to smooth the top.
  • In a small bowl whisk together the barbecue sauce, ketchup, brown sugar, vinegar, and hot sauce. Pour over top of the meatloaf (it will look like a lot but that's ok).
  • Bake for 1 hour and 10 minutes or until a thermometer reads 165 degrees. Remove from oven and let sit 10 minutes before cutting.
