Lemon Popsicle Cupcakes

Ingredients

  • 1 1/4 c. flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 stick butter 1/2 cup
  • 3/4 c. sugar I used Dixie Crystals
  • 2 eggs
  • 2 teaspoons lemon extract I used Adams extracts
  • 1 teaspoon vanilla extract I used Adams extracts
  • 1/3 c. milk
  • For the frosting:
  • 2 sticks butter 1 cup
  • 4 c. powdered sugar I used Dixie Crystals
  • 2 Tablespoons milk
  • 1 Tablespoon vanilla extract I used Adams extracts
  • For the decoration:

Instructions

  • Preheat the oven to 350 degrees. Line a cupcake tin with 12 cupcake liners.
  • In a medium bowl combine the flour, baking powder, and salt. Mix and set aside.
  • In a large bowl cream together the butter and sugar. Beat in the eggs.
  • Mix in the lemon and vanilla extracts.
  • Add half of the flour mixture to the butter mixture and mix well.
  • Add the milk to the mixture and mix until combined.
  • Add the remaining flour mixture and mix until combined.
  • Divide the batter between the cupcake liners filling each about 3/4 of the way full.
  • Bake for 22-25 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from oven and cool completely on a wire rack.
  • Meanwhile, place the butter in a large bowl and beat on medium speed. Add in the powdered sugar a half cup at a time nad mix until desired consistency is reached..
  • Add in the milk and vanilla and mix until combined.
  • Pipe the frosting onto the cooled cupcakes. Sprinkle with sprinkles.
  • Make the lollipop candies from the Wilton kit according to the package directions and place one on top of each cupcake.
