Peach Bars

Ingredients

For the crust:

  • 2 1/2 c. flour
  • 1/2 c. sugar
  • 6 Tablespoons butter cut into cubes
  • 1 egg
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

For the filling:

  • 2 1/2 c. peaches peeled and cut into small cubes
  • 2 Tablespoons lemon juice
  • 1/4 c. flour
  • 1/2 c. sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  • Preheat the oven to 350 degrees. Line a 9 x 9 baking dish with foil or parchment paper.
  • To make the crust place all the ingredients in a food processor and pulse until the mixture is the consistency of coarse sand. Set aside.
  • In a medium bowl combine the peaches and lemon juice.
  • In a small bowl combine the flour, sugar, cinnamon, and nutmeg. Mix well.
  • Pour the flour mixture over top of the peaches and toss to combine.
  • Pat half of the crust mixture into the bottom of the prepared pan.
  • Spread the peach mixture evenly over the crust then crumble the remaining dough over top of the peaches.
  • Bake for 45 minutes or until the top is golden brown.
  • Remove from oven and cool completely on a wire rack.
  • Cut into 16 bars and enjoy!
