Ponzu Roasted Carrots

Equipment

Ingredients

  • 1 1/2 pound carrots cut 1/2 inch thick on a diagnol
  • 1 Tablespoon olive oil
  • salt and black pepper
  • 2 Tablespoons Ponzu sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sesame seeds
  • 1 Tablespoon green onions chopped

Instructions

  • Preheat the oven to 400 degrees.
  • Place the carrots on a baking sheet and toss with olive oil. Sprinkle with salt and pepper.
  • Roast the carrots for 10 minutes.
  • Meanwhile, combine the Ponzu sauce and sesame oil. Pour over top of the carrots and toss to coat.
  • Roast for an additional 10 minutes.
  • Remove from oven and sprinkle with sesame seeds and green onions.
