I make Asian food a lot. It’s one of those things that I can make without even using a recipe most of the time.
I like making Asian meals because generally they can be made in 30 minutes or less. Plus I often serve them with a side of rice and sauteed vegetables so it’s an easy to make weeknight meal.
Sesame Crusted Pork Chops is a tasty dish I make that has an easy three ingredient sauce on top of it. I also love making Easy Bourbon Chicken with plenty of sauteed vegetables. When I’m craving take out I often make Beef and Broccoli. For a vegetarian dish I make Egg Roll in a Bowl with tofu.
While I make a lot of Asian main meals I have trouble with the vegetables to go along with the main dish. I usually just end up making sauteed vegetables but sometimes I get bored with that.
I recently saw a super easy recipe for Roasted Ponzu Carrots. I always have a bag of carrots in my veggie drawer so this sounded like something I could easily make.
The main issue was that I couldn’t find Ponzu sauce at any of my regular markets. Since I live in a very small town we don’t have many specialty grocers either.
What is Ponzu Sauce?
Ponzu sauce is a tangy, citrus-based Japanese condiment that can be used as a dipping sauce, marinade, or dressing. If you can’t find it in your grocery store you can make your own Homemade Ponzu Sauce.
I like the carrots in this recipe a sliced on a diagonal so that they aren’t too thick is any place. They also look really pretty when they are cut like this.
The sauce on top of the carrots is simply ponzu sauce along with sesame oil. Then the carrots are sprinkled with sesame seeds.
Can I add other vegetables?
While this recipe is simply for carrots you could add thin strips of bell peppers or broccoli florets as well. All of these would have a similar roasting time and would work well with the sauce.
Ingredients:
- carrots (I like to use organic carrots in this recipe since they are the star of the dish)
- olive oil (or your favorite cooking oil)
- Ponzu sauce (buy it or make your own using THIS RECIPE)
- sesame seeds
- green onions (optional but the color contrast is fabulous)
- sesame oil
To make the carrots preheat the oven to 400 degrees. Place the carrots on a baking sheet and drizzle with the olive oil. Sprinkle with salt and pepper. Roast for 10 minutes.
In a small bowl combine the Ponzu sauce and sesame oil. Pour over top of the carrots and toss to coat. Roast for an additional 10 minutes. Remove from oven and top with sesame seeds and green onions.
These carrots are so delicious! The citrus sauce really brights them up and the green onions add color and flavor.
I served them with additional Ponzu sauce on the side for dipping or drizzling. We served the carrots along with tofu and rice but serve them with your favorite Asian meal!
Can i use frozen carrots in this recipe?
Since frozen carrots are often soft when they thaw I wouldn’t use them because they may turn to mush by the time the roasting is finished. Fresh carrots retain a bit of their firmness after roasting.

- 1 1/2 pound carrots cut 1/2 inch thick on a diagnol
- 1 Tablespoon olive oil
- salt and black pepper
- 2 Tablespoons Ponzu sauce
- 1 teaspoon sesame oil
- 1 teaspoon sesame seeds
- 1 Tablespoon green onions chopped
Instructions
- Preheat the oven to 400 degrees.
- Place the carrots on a baking sheet and toss with olive oil. Sprinkle with salt and pepper.

- Meanwhile, combine the Ponzu sauce and sesame oil. Pour over top of the carrots and toss to coat.
