boneless pork loin
cut into 2 inch pieces

c.
rice vinegar
1/4
c.
white vinegar
1/4
c.
soy sauce

teaspoons
black pepper
6
garlic cloves
minced

large shallot

sauteed vegetables
Instructions
In a large bowl combine the pork, both types of vinegar, soy sauce, black pepper, garlic, and shallot. Mix well, cover, and refrigerate for 2-4 hours.
Pour the pork mixture, along with 2 cups water, in a large sauce pan. Heat over medium high heat and bring to a boil.
Reduce heat and simmer for 30 minutes, stirring occasionally.
Serve pork and vegetables over rice. Top with more adobo sauce.
