Pork Adobo

Ingredients

  • 2 1/2 lb. boneless pork loin cut into 2 inch pieces
  • 1/4 c. rice vinegar
  • 1/4 c. white vinegar
  • 1/4 c. soy sauce
  • 2 teaspoons black pepper
  • 6 garlic cloves minced
  • 1 large shallot minced
  • 4 c. rice
  • 2 c. sauteed vegetables

Instructions

  • In a large bowl combine the pork, both types of vinegar, soy sauce, black pepper, garlic, and shallot. Mix well, cover, and refrigerate for 2-4 hours.
  • Pour the pork mixture, along with 2 cups water, in a large sauce pan. Heat over medium high heat and bring to a boil.
  • Reduce heat and simmer for 30 minutes, stirring occasionally.
  • Serve pork and vegetables over rice. Top with more adobo sauce.
