Pour the olive oil in a large skillet over medium heat.
Put the melted butter and mustard in a shallow dish. Combine the pretzel crumbs, breadcrumbs, pepper, and garlic salt in another small dish.
Dip the pork chops into the butter and mustard mix. Press into the pretzel and breadcrumb mixture.
Place the pork chops in a saute pan and heat for 3-4 minutes per side.
Once the pork chops reach 155 degrees sprinkle the cheese on top.
Heat for 2-3 more minutes or until the cheese is melted.
