Pumpkin Baked Oatmeal

Ingredients

  • 1 1/2 cups oats
  • 3 Tablespoons walnuts chopped
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar
  • 1 cup whole milk
  • 1 egg
  • 3 Tablespoons coconut oil
  • 1 teaspoon vanilla
  • 1 cup pumpkin puree
  • 1/2 cup craisins
  • 1/4 cup walnuts chopped

Instructions

  • Preheat the oven to 375 degrees.
  • In a large bowl combine the oats, 3 tablespoons of chopped walnuts, baking powder, cinnamon, salt, and brown sugar. Mix well and set aside.
  • In a medium bowl combine the milk, eggs, coconut oil, vanilla, and pumpkin. Mix well.
  • Pour the pumpkin mixture into the oat mixture and mix until combine. Pour into an 8 x 8 baking dish.
  • Sprinkle the top of the oatmeal with craisins and walnuts. Bake for 30 minutes. Remove from oven and allow to cool for 10 minutes.
  • Cut into pieces and serve.
