Skillet Lemon Parmesan Chicken with Zucchini and Squash

Ingredients

  • 1 1/2 lb. boneless chicken breasts diced
  • 2 Tablespoons butter
  • salt and black pepper
  • 3 Tablespoons white wine
  • 1 Tablespoon Italian seasoning
  • 2 teaspoons garlic powder
  • 1 teaspoon rosemary
  • 1 teaspoon lemon zest
  • 2 small zucchini halved lengthwise then diced
  • 2 small yellow squash halved lengthwise then diced
  • 4 garlic cloves minced
  • 1/4 c. fresh grated Parmesan cheese
  • 2 Tablespoons fresh lemon juice

Instructions

  • Heat the butter in a large skillet over medium heat.
  • Sprinkle the chicken with salt and butter.
  • Add the chicken and sautee for 5 minutes.
  • Add in the wine, Italian seasoning, garlic powder, rosemary, lemon zest, zucchini, squash, and garlic cloves. Saute for 6-8 mintues or until the zucchini and squash are soft and cooked.
  • Remove from heat and sprinkle with Parmesan cheese and lemon juice. Toss to coat.
  • Serve with rice or pasta.
