3lbs.boneless chicken breasts and boneless chicken thighs
1onioncut into thin slices
1bell pepperchopped
1teaspoonfresh gingergrated
4garlic clovesminced
1/2teaspoonSrirachaoptional
2Tablespoonshoney
3Tablespoonsbrown sugar
3Tablespoonscider vinegar
¼c.Bourbon
⅓c.soy sauce
½c.water
1teaspoonblack pepper
2c.broccoli florets
4c.rice
Instructions
Place the chicken in the bottom of a slow cooker.
Sprinkle the onions and peppers around the chicken.
In a medium bowl combine the ginger, garlic, Sriracha, honey, brown sugar, ketchup, vinegar, Bourbon, soy sauce, water, and black pepper. Mix well and pour over top of the chicken.
Cook on low for 7 hours.
Add the broccoli and any other vegetables. Replace the lid and cook for 30 minutes-1 hour or until the vegetables are tender.
