Strawberry Swirl Banana Bread

Classic banana bread with a strawberry swirl.

Ingredients

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 4 Tablespoons butter softened
  • 2 eggs
  • 2 medium bananas mashed
  • 1/3 cup applesauce
  • 1 teaspoon vanilla
  • 1/2 cup strawberry jam divided

Instructions

  • Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray.
  • In a medium bowl combine the flour, baking powder, and salt. Mix and set aside.
  • In a large bowl cream the sugar and butter. Add in the eggs and beat well.
  • Stir in the bananas, applesauce, and vanilla and mix until smooth.
  • Stir in the flour mixture to the butter mixture.
  • Pour half of the the banana bread mixture into the prepared pan.
  • Place dollops of strawberry jam on top of the banana bread mixture. Using a butter knife spread the jam over top of the batter in the pan.
  • Pour the remaining batter on top of the jam.
  • Place dollops of the remaining jam on top of the batter. Use a knife to swirl the jam on top of the batter.
  • Bake for 1 hour. Remove from the oven and cool in the pan for 10 minutes. Run a butter knife around the edges of the bread and remove from the pan. Cool on a wire rack.
