Strawberry Swirl Banana Bread

Get ready for the sweetest mash up ever! This banana bread is moist, flavorful, and swirled with sweet strawberry jam for the perfect fruity twist. One slice and you’ll be hooked.

I don’t know about your family but we often have bananas left over at the end of the week. Most times I either mash the bananas and freeze them or I make banana bread.
While my favorite banana bread is Classic Banana Bread with Buttercream Frosting on top (which is a recipe from my eighth grade home economics class), we sometimes get tired of just having plain banana bread.
During the holiday season I really like this Eggnog Banana Bread. For a decadent banana bread that’s great for brunch or a midday snack Butterscotch Brown Butter Banana Bread with Oats is perfect. Then there’s Bananas Foster Banana Bread for something a little different.
I usually only make banana bread whenever we have overripe bananas that need to be used but there are occasions when I want to make it and none of my bananas are overly ripe.
How do I get bananas to ripen quickly?
Since you need ripened bananas for this recipe sometimes you need to speed up the process. Place the bananas in a paper bag with either an already ripened banana or an apple and fold down the opening of the bag. Your bananas will ripen in a day or two.
Another way to ripen then quickly is to place unpeeled bananas on a foil lined baking sheet Bake at 300 degrees for 15-20 minutes and your bananas will be ripe.
Once you have the ripe bananas you will need to mash them before mixing them into the bread. This is easy to do.
How do I mash the bananas?
Honestly, if they are ripe enough I just put them in my hands and squeeze them until they are mashed. You can also use a fork and place the bananas in a bowl and mash them with the fork. You can also use your hand mixer to mash the bananas by cutting them into pieces and starting the mixer on low and increasing until the bananas are mixed.
The main difference with this bread is that there is a swirl of strawberry jam in the middle of it and a swirl of strawberry jam on top. This gives it a bright berry flavor that pairs perfectly with the bananas.
Can I use another type of jam?
Of course! Some flavors that would pair well with the bananas are cherry, blueberry, peach, or grape. You can really use any type of fruit jam that you would enjoy with bananas.
Ingredients:
- all purpose flour
- baking powder
- salt
- granulated sugar
- salted butter (or you can use unsalted)
- eggs
- ripe bananas
- applesauce
- vanilla extract
- strawberry jam
To make the bread preheat the oven to 350 degrees. Spray a loaf pan with cooking spray. In a bowl combine the flour, baking powder, and salt. In a large bowl cream together the butter and sugar. Mix in the eggs. Add the mashed bananas, applesauce, and vanilla. Add the flour mixture to the banana mixture and mix well to combine.
Pour half of the batter into the prepared pan. Place dollops of strawberry jam on top of the batter then use a knife to spread it out on top of the batter. Pour the remaining batter over top of the jam. Place dollops of strawberry jam on top of the batter and use a knife to swirl the jam into the top of the batter. Bake for 1 hour.
This bread was actually really delicious! The fresh pop of strawberries really adds to the typical banana bread flavor.
The jam on top got thick and sticky and it adds a nice texture to the bread. I thought it was a delicious addition and I can’t wait to try it with a different jam flavor next time.

Strawberry Swirl Banana Bread
Equipment
- 1 loaf pan
Ingredients
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup sugar
- 4 Tablespoons butter softened
- 2 eggs
- 2 medium bananas mashed
- 1/3 cup applesauce
- 1 teaspoon vanilla
- 1/2 cup strawberry jam divided
Instructions
- Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray.
- In a medium bowl combine the flour, baking powder, and salt. Mix and set aside.
- In a large bowl cream the sugar and butter. Add in the eggs and beat well.
- Stir in the bananas, applesauce, and vanilla and mix until smooth.
- Stir in the flour mixture to the butter mixture.
- Pour half of the the banana bread mixture into the prepared pan.
- Place dollops of strawberry jam on top of the banana bread mixture. Using a butter knife spread the jam over top of the batter in the pan.
- Pour the remaining batter on top of the jam.
- Place dollops of the remaining jam on top of the batter. Use a knife to swirl the jam on top of the batter.
- Bake for 1 hour. Remove from the oven and cool in the pan for 10 minutes. Run a butter knife around the edges of the bread and remove from the pan. Cool on a wire rack.

I have a couple of bananas sitting on my kitchen counter, I will make this bread.
No matter how many bananas I buy the guys always seem to leave 2 behind. I think it’s because they know I’ll make banana bread. This will be a bit hit here, thank you!
