Swiss Bacon Tarts

Ingredients

  • 6 strips bacon diced
  • 1/2 c. onion finely chopped
  • 2 garlic cloves minced
  • 1 10 oz package frozen chopped spinach, thawed and squeezed dry
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 package frozen puff pastry cups 24
  • 3/4 c. shredded Swiss cheese

Instructions

  • Preheat the oven to 400 degrees.
  • In a large skillet cook the bacon over medium heat until crisp. Remove the bacon to a paper towel lined plate. Reserve 2 T. of drippings.
  • Saute the onions and garlic in the drippings over medium heat until tender.
  • Stir in the spinach, Worcestershire sauce, salt, and pepper and heat through. Stir in the bacon and remove from heat.
  • Place the puff pastry cups on two baking sheets. Put them in the oven and bake for 15 minutes.
  • Remove the pastry cups from the oven and push down on the middles.
  • Sprinkle Swiss cheese on the bottom of each cup then top with a spoonful of the spinach mixture and sprinkle with more cheese.
  • Place the cups back in the oven for 5 minutes.
  • Remove and serve hot.
