The Best Veggie Burger

Made with a base of black beans and walnuts with plenty of spices, these veggie burgers are bursting with flavor!

Ingredients

  • 1 c. canned black beans rinsed and drained
  • 1 c. walnuts chopped
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 Tablespoon oil from sun-dried tomatoes
  • 1/4 c. shredded carrot
  • 1 shallot minced
  • 2 Tablespoons oil packed sun-dried tomatoes chopped
  • 2 garlic cloves minced
  • 1/4 c. oats
  • 1 Tablespoon soy sauce
  • 1/4 c. BBQ sauce optional
  • 4 burger buns

Instructions

  • Preheat the oven to 325 degrees. Spread black beans on a baking sheet and bake for 6-8 minutes or until they begin to split open.
  • Meanwhile, cook the walnuts, cumin, paprika, and chili powder in a medium skilled over medium heat for 2-3 minutes or until they are fragrant.
  • Remove from pan and cool.
  • In the same skillet heat the oil from the sun dried tomatoes over medium heat. Add the carrot, shallow, sun dried tomatoes, and garlic. Cook for 5 minutes.
  • Place the carrot mixture, beans, walnut mixture, oats, and soy sauce in a food processor. Pulse until combined.
  • Shape the mixture into 4 burger patties.
  • Heat a tablespoon of olive oil in a skillet. Add the bean patties and cook for 3-5 minutes per side or until browned. Baste with BBQ sauce if desired.
  • Serve on buns with choice of toppings.
