Triple Berry Pie

A sweet and tart combination of three berries make up the filling of this delicious Berry Pie.

Ingredients

  • 1 refrigerated pie crust dough
  • 2/3 c. sugar
  • 3 Tablespoons cornstarch or pie thickener
  • 2 Tablespoons lemon juice
  • 1 teaspoon cinnamon
  • 6 c. berries sliced (I used strawberries, blueberries, and blackberries)
  • 2/3 c. flour
  • 1/3 c. brown sugar
  • 1/3 c. butter
  • 1 Tablespoon sugar
  • 1 teaspoon cinnamon

Instructions

  • Preheat the oven to 375 degrees.
  • Place the pie crust in a pie pan, line with parchment paper, and fill with pie weights or dried beans. Bake for 20 minutes.
  • While the crust is baking combine the sugar, cornstarch, lemon juice, cinnamon, and berries in a bowl. Mix well to coat the berries then set aside for 15 minutes.
  • In a small bowl combine the flour, brown sugar, butter, sugar, and cinnamon. Use your hands to mix into a crumble.
  • Once the crust is out of the oven pour the berry mixture into it. Sprinkle the crumble on top.
  • Bake for 45 minutes or until the filling is bubbling and the topping is golden brown. If the crust starts getting too browned during baking simply put foil over top of the crust.
  • Allow the pie to cool for at least 1 hour to thicken up the filling then slice and serve.
