Ingredients
1
lb
extra firm tofu
drained, pressed, and cut into 1 inch cubes
1
packet taco seasoning
2
teaspoons
olive oil
4
c.
tortilla chips
1
c.
refried beans
1
4 oz can green chilies
1
c.
salsa
1
c.
cheddar or Pepper Jack cheese
sour cream
Instructions
Preheat the oven to 375 degrees.
Toss the tofu with the taco seasoning.
In a large skillet heat the olive oil over medium high heat. Add the tofu and cook for 10 minutes, stirring occasionally.
Place the tortilla chips in the bottom of a 9 x 13 baking dish.
Add the tofu, refried beans, green chililes, and salsa. Sprinkle with cheese.
Bake the nachos for 10 minutes.
Remove from oven and serve with sour cream.
