I’m in the home stretch of this school year and I can tell you I can’t wait until June! It’s been a long year and the last month or two are always the longest. By the time I get home from work I’m tired and I’m hungry. The last thing I want to do is think about making dinner.
Lately I’ve been grabbing a healthy snack as soon as I get home. This “unofficial meal” at 4:00 helps my husband and I power through the things we need to do in the evening before it’s time for dinner. By eating something in the afternoon hours it gives me some energy to blog for an hour or two before dinner and it gives my husband time to finish up his work for the day.
Now when I talk about grabbing something before dinner I’m not talking about cooking something. I want something that I can have on the table in under 5 minutes and that my husband and I can enjoy while talking about our days. I’ve found one of my favorite things to eat is Sabra Hummus. I can get the hummus out of the refrigerator along with some type of vegetables while my husband grabs tortilla chips or pita chips and we meet in the dining room. If the weather is nice we go out and enjoy it on our sun porch.
I love Sabra hummus and all of the amazing flavors but when I’m eating it for an unofficial meal after work I want to add a little something to it. Why? Because I can’t leave things alone! While I don’t want to cook something I have trouble not adding my own flare to what I’m eating. One of my favorite ways to turn Sabra Original hummus into something new is to add garlic, ginger, and edamame. It’s delicious!
So my new thing after work is to spend 10 minutes looking through my cabinets for ingredients to use as a hummus topper. I think I’ve found a new favorite. Picture Sabra Original hummus topped with sweet crystallized ginger and chopped walnuts! Now sprinkle on a bit of cardamom and paprika and there you have it. It’s slightly sweet, a little bit crunchy, and the spices add just a hint of flavor to the mix.
This newest hummus topping is great with pita chips, celery, carrots, or tortilla chips. I’ve been making it with the original hummus but I really want to try it with the lemon hummus. I think it would be awesome with the added dimension of bright lemon flavor. I’m also planning on making the ginger walnut hummus and the garlic, ginger, and edamame hummus as a snack for when my book club comes over. We never do a big meal but we always like something to munch on!
- 1 container Sabra Original hummus
- 1 T. crystallized ginger, finally chopped
- 3 T. walnuts, chopped
- 1 t. paprika
- ½ t. cardamom
- Pita chips, tortilla chips, vegetables for dipping
- Open up the container of Sabra hummus.
- Put the chopped walnuts and ginger in the center of the hummus.
- Sprinkle with paprika and cardamom.
- Serve with pita chips, tortilla chips, or vegetables!
