Gourmet Iced Oatmeal Raisin Cookies

Whenever I want a simple cookie without chocolate I turn to Oatmeal Raisin Cookies.   They are a bit of an old fashioned cookie but I love how soft they are and the taste of the cinnamon with the chewy oats and the little bursts of raisins.  My husband also enjoys a good oatmeal raisin cookie.  So when I found out that this month’s Creative Cookie theme was Chips, Chunks, or Bits, I knew right away I wanted to do an oatmeal raisin cookie.

These aren't your grandma's oatmeal cookies.  Gourmet Iced Oatmeal Raisin Cookies have raisins, pecans, and butterscotch chips in them!

However, in order to make these cookies have even more chips, chunks, or bits in them, I wanted to add a few more ingredients.   Since butterscotch always goes well with oatmeal I first added butterscotch chips.  Now I didn’t add a ton of butterscotch chips because I didn’t want them to overwhelm the actual flavor of the cookies.   I added just enough to give the cookies a little bit of butterscotch flavor.

Then I added in some pecans.  I figured the pecans would add a bit of flavor and a whole lot of crunch.   To finish them cookies off I took the idea of old fashioned iced oatmeal cookies and I gave them a simple powdered sugar glaze.   The result was an amazing gourmet oatmeal raisin cookie.  I call this a gourmet cookie because it reminds me of one of those big cookies you buy for $2.50 a piece at the local bakery or cookie shop.  The good news is that you can make a whole batch of these cookies for around $6 or $7.

These Gourmet Oatmeal Raisin Cookies are iced and have a nice crunch from pecans.

While these cookies are sweet, surprisingly they aren’t overly sweet.  I think it’s because the nuts and the oats take away from some of the sugar and tone it down a bit.  Even with the icing it these cookies aren’t too sweet.   They are slightly crisp on the edges but the insides are so soft and chewy.  They are a great cookie to serve with tea or coffee.

Gourmet Iced Oatmeal Raisin Cookies

Yield: 3 dozen
Prep Time: 15 minutes
Cook Time: 16 minutes
Total Time: 31 minutes

Oatmeal Raisin Cookies get a make over with sweet butterscotch chips, crunchy pecans, and a thick powdered sugar glaze.

Ingredients

For the cookies:

  • 2 c. oats
  • 2 c. flour
  • 1 Tablespoon baking powder
  • 2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon salt
  • 1 c. butter (2 sticks), softened
  • 1 c. sugar
  • 1/2 c. brown sugar
  • 2 eggs
  • 1/2 c. raisins
  • 1/2 c. pecans, chopped
  • 1/4 c. butterscotch chips

For the icing:

  • 1 c. powdered sugar
  • 1 teaspoon vanilla
  • 2-3 Tablespoons milk

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a medium bowl combine the oats, flour, baking powder, cinnamon, nutmeg, and salt. Mix well and set aside.
  3. In a large bowl cream the butter, sugar, and brown sugar until smooth. Add in the eggs one at a time, stirring well after each addition, until combined.
  4. Add the oat mixture to the butter mixture and stir until combined.
  5. Gently fold in the raisins, pecans, and butterscotch chips.
  6. Drop a tablespoon of cookie batter onto cookie sheets, 2 inches apart. Bake for 14-16 minutes or until the edges are brown.
  7. Remove from oven and transfer to a wire rack to cool.
  8. Once the cookies are cool prepare the icing by combining the powdered sugar and vanilla in a bowl. Add in the milk, one tablespoon at a time, until the mixture is thick but spreadable.
  9. Dunk the top of each cookie into the icing and let the excess drip off. Flip over and place on wire rack so excess can drip off.

  1. I have to admit that I prefer my oatmeal cookies with chocolate chips rather than raisins but I can wholeheartedly endorse the addition of pecans and butterscotch. That shiny icing is just perfect too!

  2. Wow … these look just like the iced oatmeal cookies my mom used to buy me when I was a kid! I love the addition of butterscotch and pecans … and that glaze! It’s perfect!

    These are going on my “to make” list ASAP!
