We haven’t had many snow days this year.   It’s been such a weird combination of warm, sunny days with temperatures in the 50’s and 60’s and freezing cold days with rain or snow.   Even when we’ve had snow we haven’t had much of it.  Usually we have well over 100 inches during the winter but I’d be surprised if we break 50 inches this year.

A few weeks ago we had a 2 hour delay.  I’ll be honest, I’m not sure why we had the delay.  There was less than an inch of snow outside and the temperature was in the 20’s but I wasn’t going to complain.  I love delay days.  However, since I thought for sure we didn’t have one I was already up and working when the call came in.

Instead of going back to sleep I decided to get some work done.  I worked on my blog, did laundry, and did a little bit of baking.  After all of that I still had an hour before I had to leave for work so I decided to surprise my husband by making breakfast.   I rarely even make breakfast so when I do it’s a real treat.

I had a large two pound package of Florida Strawberries in my refrigerator so I decided to use them to make Strawberry Shortcake Pancakes.  I pulled out all of the ingredients and then looked for the syrup.  Unfortunately we were completely out of syrup.  I looked at a few syrup recipes and then thought that I could tweak them into a delicious strawberry syrup that would go perfectly with these pancakes.

I whipped up a batch of my old fashioned pancakes because they are a delicious base for any pancake creation.   As I made the batter I had the strawberry syrup going on the stove.  Once everything was finished all I had to do was put the pancakes together.

I layered a few pancakes on each of two plates.   Then I topped each stack with a small handful of sliced strawberries.   I poured the warm strawberry syrup over top of the pancake stacks then I finished them off with a spray of whipped cream.  These pancakes were incredible!    The syrup was sweet and tasted of fresh strawberries.  The fresh strawberries on top were sweet and slightly tart and the whipped cream added a nice creaminess.  This was definitely a fun delay day breakfast but it would be great as a dessert as well!

Strawberry Shortcake Pancakes with Homemade Syrup

Total Time: 30 minutes

Delicious cinnamon pancakes topped with homemade strawberry syrup, strawberries, and whipped cream.

Ingredients

For the strawberry syrup:

  • 1/2 strawberries, chopped
  • 1/2 c. water
  • 1 c. brown sugar
  • 4 Tablespoons butter
  • 1 teaspoon vanilla

For the pancakes:

  • 1 ½ c. flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 2 Tablespoons sugar
  • 1 ¼ c. buttermilk
  • 1 egg, beaten
  • 3 Tablespoons melted butter

For the topping:

  • 6 strawberries, sliced
  • 1/4 c. whipped cream

Instructions

  1. In a small saucepan combine the strawberries and water over high heat. Bring to a boil and boil for 7 minutes.
  2. Strain through a fine mesh sieve. Return a half cup of the strained juice to the pan along with the brown sugar. Bring to a boil over high heat. Cook for 5 minutes.
  3. Add in the butter and boil for an additional 2 minutes. Remove from heat and stir in the vanilla. Remove from heat.
  4. To make the pancakes combine all the ingredients in a bowl and whisk until smooth.
  5. Heat a large saute pan over medium high heat. Spray with cooking spray.
  6. Pour a quarter cup of pancake batter into the pan in two different places. Cook for 2 minutes per side. Remove from pan and repeat with remaining pancake batter.
  7. Stack three pancakes on each of three plates. Top with a small handful of sliced strawberries, strawberry syrup, and whipped cream. Enjoy!
