Work has been a little bit stressful lately. I’m not sure what has been going on but I just feel like I cannot catch up. Every time I feel like I’ve got most of the things checked off my list three more things come up. I’m having a hard time planning with my teachers, planning for my math groups, writing IEP’s, and managing everything else.
I know that part of it is that I get to work right around 8:00 this year. For the last 15 years I’ve gotten to work a half hour early and was able to get a lot done. With Baby J around I don’t like to leave until the last possible minute so I don’t have that 30 minutes of planning early in the morning anymore. I also have math groups from 9-11:15 every day so it’s extremely busy until lunch time.
All of that to say I’ve been a little stressed at work. As most of my readers know when I get stressed I like to bake. It really is a stress relief to me even if I then tend to stress eat what I’ve made. Luckily on the weekend either Baby J cooks with me or my husband hangs with him and I can do a little bit of baking. Either way works well and I have started baking a few times a month again.
One of the treats I made last month were these Cinnamon Cream Cheese Cookies. Anything with cream cheese in it is a winner in my book. I think it helps to keep the cookies moist and adds a delicious creaminess to them. Plus cinnamon and cream cheese work so well together I knew these were going to be a hit.
I made a batch of them and baked them up. The batter was super simple and can be refrigerated for at least an hour or up to 48 hours. The cookies are small and round and taste delicious. I loved the cinnamon sugar taste and the hint of tang from the cream cheese. I took some over to my friends at Starbucks on campus and they were thrilled with them as well.
- ½ c. butter (1 stick)
- 4 oz cream cheese
- 1½ c. powdered sugar
- 1 egg
- 1 T. vanilla
- 1 t. baking powder
- 1 t. cinnamon
- 1 t. salt
- 1¾ c. flour
- ¼ c. sugar
- 1 T. cinnamon
- In a large bowl combine the butter, cream cheese, and powdered sugar. Mix well to combine.
- Add in the egg and vanilla and mix well.
- In a medium bowl combine the baking powder, cinnamon, salt, and flour. Mix well.
- Pour the flour mixture into the butter mixture and mix until well combined.
- Cover and refrigerate the dough for at least one hour or up to 48 hours.
- When you are ready to make the cookies preheat the oven to 375 degrees.
- Combine the remaining sugar and cinnamon in a small bowl.
- Roll the dough into one inch balls and roll in the cinnamon sugar mixture. Place them on a cookie sheet at least 2 inches apart.
- Bake for 10-12 minutes then remove from oven. Allow to cool for 3 minutes on the cookie sheet then remove to a wire rack to cool completely.
