Bourbon Pecan Pie Coffee Cupcakes with Caramel Frosting

While I am a summer girl through and through I have to admit that in the last 5 to 10 years fall has really been growing on me. I love being able to throw on a hoodie when I’m going outside but not have to worry about a coat.  The flavors that come out in the fall like pumpkin, apples, and spices are some of my favorite.  Fall is definitely my favorite foodie season.

Take a bit out of these Bourbon Pecan Pie Cupcakes with Caaramel Frosting

I recently received a box of Door County Coffee Fall Flavors and they are amazing.  If you’ve never had Door County Coffee you need to try it.  Just the smell of it gets me excited.   I could totally guess the flavor of the coffee just by the scent which isn’t always the case.  The have a Bourbon Pecan Pie Coffee which was the basis for my Bourbon Pecan Pie Coffee Cupcakes with Caramel Frosting.

The base of the cupcake is simply a vanilla cupcake made with brown sugar instead of granulated because when I think of pecan pie I think of brown sugar.   Into the cupcake batter goes strong brewed Bourbon Pecan Pie Coffee.  While a lot of coffees simply add a hint of flavor to baked goods this coffee really seems to hold its flavor.

To give the cupcakes a little more pecan flavor I also added chopped Millican Pecan pecans.  The cupcakes baked up nicely and had a delicious smell.   I ate one before putting the frosting on just to see if I could get the flavors I wanted and I certainly could.  The pecan pie flavor is evident with just a hint of bourbon.  These are delicious cupcakes even without the frosting.

Now let’s talk about this frosting.  It gave me a hard time.  The first time I tried making it I used caramel sauce and some of the coffee and it was so runny.   I could not add enough powdered sugar to make the frosting firm.  My second shot at the frosting was much better.  I left the coffee out since the cupcakes already had enough flavor in them and used about half the caramel sauce and more butter.  This seemed to work out better.  While the frosting still wasn’t super firm it was good enough to hold its shape.

The frosting is buttery and flavored with caramel.   On top of that I put just a dusting of cinnamon and a single Millican Cinnamon Candied Pecan on top.  The cupcakes looked amazing and I couldn’t wait to try one.  My husband and I each grabbed one and it was love at first bite.  The frosting is sweet and tastes like caramel while the cupcakes definitely have a coffee and pecan flavor.  These are basically fall in a cupcake!

Bourbon Pecan Pie Coffee Cupcakes with Caramel Frosting

Bourbon Pecan Pie Coffee flavored cupcakes topped off with Caramel buttercream frosting and a cinnamon pecan.

Ingredients

For the cupcakes:

  • 1 stick butter softened
  • 3/4 c. brown sugar
  • 3 eggs
  • 1 teaspoons vanilla
  • 1 1/2 c. flour
  • 2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1/4 c. strong brewed Door County Coffee Bourbon Pecan Pie coffee cooled
  • 1/2 c. pecans chopped (I used MIllican Pecans)

For the frosting:

  • 1 1/2 sticks butter 12 tablespoons
  • 3 teaspoons caramel sauce
  • 4 cups powdered sugar
  • 1 teaspoons vanilla
  • 12 Millican Candied Cinnamon Pecans
  • cinnamon for dusting optional

Instructions

  • Preheat the oven to 350 degrees. Line a muffin tin with cupcake liners.
  • In a large bowl cream together the butter and brown sugar.
  • Add the eggs and mix well.
  • Stir in the vanilla.
  • In a medium bowl combine the flour, baking powder, and salt.
  • Add half the flour mixture to the butter mixture and mix well.
  • Add in the coffee and stir until well combined.
  • Add the remaining flour mixture and mix until everything is well combined.
  • Fold in the pecans.
  • Fill cupcake liners 3/4 of the way full.
  • Bake for 18-20 minutes. Remove from oven and cool completely.
  • To make the frosting place the butter in a large bowl and beat with a mixer.
  • Add the caramel sauce and beat until smooth.
  • Add the powdered sugar a cup at a time, beating after each addition, until desired consistency is reached. Mix in the vanilla.
  • Pipe the frosting onto the cupcakes. Dust with cinnamon and top with candied cinnamon pecan.

  1. These cupcakes sound delicious. The flavor combo is just perfect. My favorite fall flavor would be this or salted caramel.
