I know it's been a month since I shared a meal plan but November was so busy! I participated in Holiday Side Dish Week, Christmas Cookie Week, and Cranberry Week. That kept me hopping but I'm back and ready to share some favorites for the holidays.
During the holidays I feel like I only have two types of meals. First is the super fast and easy weeknight meal. This is what I make whenever I have a million other things to bake. The second is a fancy holiday meal because people are coming over.
Prior to the holiday season I like to do one of two things to get ready. I often will make a double batch of whatever I'm cooking and freeze one batch. That way whenever I don't feel like cooking I can just pull something out of the freezer.
Freezer Friendly Recipes:
If I don't have something in the freezer I often go with a meal service for a month or two. I did this over the summer when I was struggling and it was a lifesaver. I simply choose the meal, they send me all the ingredients, and then I make it at some point during the week. It makes it really easy.
But today I'm sharing recipes that can be used on busy nights and some that can be used for holiday meals. Use them to plan out your weeks in the busy month of December!
For main entrees I'm sharing my favorite Prime Rib Roast which is easier to make then you think. Then I have an easy Instant Pot Chicken Slider meal and a tasty pizza with homemade crust. I can't forget the easy to make and healthy pork lettuce wraps or the festive Chicken with Maple Cranberry sauce.
My French Onion Soup is the perfect side dish for a holiday meal or an entree for a busy night. There's also a tasty Brussels Sprouts and Sweet Potato dish. Finally I'm sharing Twice Baked Potato Casserole.
Next up are holiday desserts. My award winning White Chocolate Peppermint Cupcakes with Hot Chocolate Frosting won me all new kitchen appliances several years ago! Then there's my easy White Christmas Cookie Dough Fudge and White Christmas Cupcakes.
